The Hobenköök is a market hall and restaurant at the same time. A place for seasonal-regional enjoyment in Hamburg’s Oberhafen. Connoisseurs, foodies and fans of regional food like me who want to know where their food comes from are in the right place at Hobenköök (Low German for “harbour kitchen”). The creators, top chef Thomas Sampl, Neele Grünberg and Frank Chemnitz, offer food from over 200 producers around Hamburg. For the restaurant, the chefs help themselves in the market hall, where they find seasonal products and process them fresh into their dishes. Every day, small, fine variations of the menu in the restaurant are created. Everything from the vegetables at the market stall is used, radish leaves become soup, bouillon is cooked from the peels of the vegetables, cheese sections from the cheese counter find their way into the cheese salad at the salad bar. So hardly anything has to be thrown away.
