Philipp Enderle, the new chef, brings new momentum to the kitchen with a French bistro menu. The emphasis on fresh local produce and sustainable preparation is particularly popular nowadays and speaks to a conscious gastronomic orientation. The menu includes delicacies ranging from black feather chicken pâté, beef tartare to eagle fish with wild cauliflower and pickled plums with star anise ice cream.
