Dittmeyer's Austern Compagnie on Sylt is an excellent ambassador for the North. Since 1986 they have been continuing the long tradition of North German oyster fishing with their Sylter Royal. These exquisite oysters are grown on oyster beds in the North Frisian Wadden Sea National Park, in the Blidsel Bay off List. The rhythm of work here is determined by the tides, as the ebb and flow of the tide dictate the conditions for oyster farming. Oyster farming takes place on so-called "table cultures", in which the animals are filled into net bags and placed on iron racks.

In February 2020, Dittmeyer’s Austern Compagnie opened a new building with a restaurant and oyster bar in List, the Sylter Royal, where guests can enjoy a wide selection of oyster dishes. In addition to culinary delights, the restaurant also offers an interesting insight into the seawater pools where oysters are farmed. Dittmeyer’s Austern Compagnie, as a North German company, shares the values of the people in the region, including sustainable thinking and action as well as responsibility towards nature and people. Its revival and continuation of the unique Sylt oyster tradition has made it an integral part of the culture on the North German coast and especially on the island of Sylt.
