Fisch Witte at the Viktualienmarkt in Munich expanded its range in 2005 to include its own bistro. Here, a warm cuisine is offered, which clearly stands out from the usual snack stands. The bistro, with its 50 seats, deliberately focuses on freshness and quality. There is no space for microwaves or deep fryers, because here everything is freshly and carefully prepared. The Handelsblatt even classified the bistro in the category of food stalls in a class of its own, as it almost reaches the level of star restaurants.
In the early hours of the morning, the fish suppliers come and exchange regularly with the owners, each of whom is personally known. They maintain particularly close relationships with their suppliers, most of whom have been with them for many years. Together, they are committed to the seemingly impossible: the perfect control of supply chains, expeditions to the most remote places and the continuous search for culinary highlights. Fisch Witte’s commitment to first-class quality and taste is deeply rooted – they do everything they can to continue this tradition in the bistro.
